Ingredients

  • 5 pounds chicken pieces
  • 2 tablespoons flour
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 cloves garlic crushed
  • 1/3 cup dry white wine
  • 14 ounces tomato puree
  • 4 anchovies finely chopped
  • 2 tablespoons shredded basil plus more leaves to serve
  • 2 ounces black olives pitted, halved
  • pasta cooked according to package instructions, to serve

Directions

    Dust chicken pieces with flour. Heat oil in a flameproof casserole dish on high. Saute chicken, in batches, 2 mins each side, until browned. Remove from pan and set aside.

    Reduce heat to medium. Add onion and garlic to pan and saute 3 mins, until soft. Return chicken thighs to pan and add wine. Simmer 2 mins, until wine has almost all evaporated. Add tomato puree and 1 cup water. Cover and simmer 5 mins. Add drumsticks and cook, covered, 5 more mins. Add remaining chicken and anchovies and simmer, covered, 15 mins, until cooked through. Stir in shredded basil and sprinkle with olives. Garnish with basil leaves and serve with pasta.
