- 1 (3 lb.) fryer, cut up
- sprinkle of salt and pepper
- 1/4 c. olive oil
- 1 medium onion, chopped
- 1 green pepper, chopped
- 1 garlic clove, minced
- 1/2 c. mushrooms, sliced
- 1 (6 oz.) can tomato paste
- 2 c. hot water
- 1/4 c. dry red wine
- 1 bay leaf, crushed
Directions

1Sprinkle chicken with salt and pepper.

2Heat oil in heavy skillet.

3Brown chicken on all sides.

4Push to side of pan; add onion, green pepper, garlic and mushrooms.

5Saute a few minutes. Mix tomato paste with remaining ingredients and pour over chicken; stir well.

6Cover and simmer gently until tender, about 30 minutes.

7Uncover and simmer until sauce is as thick as you like.
