Ingredients

  • 1 (3 lb.) fryer, cut up
  • sprinkle of salt and pepper
  • 1/4 c. olive oil
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 garlic clove, minced
  • 1/2 c. mushrooms, sliced
  • 1 (6 oz.) can tomato paste
  • 2 c. hot water
  • 1/4 c. dry red wine
  • 1 bay leaf, crushed

Directions

    Sprinkle chicken with salt and pepper.

    Heat oil in heavy skillet.

    Brown chicken on all sides.

    Push to side of pan; add onion, green pepper, garlic and mushrooms.

    Saute a few minutes. Mix tomato paste with remaining ingredients and pour over chicken; stir well.

    Cover and simmer gently until tender, about 30 minutes.

    Uncover and simmer until sauce is as thick as you like.
