Chicken Cacciatore

Ingredients

  • 2 tablespoons olive oil
  • 1 chicken, about 3 pounds, cut up
  • 1 large onion, chopped
  • 16 ounces canned whole tomatoes with liquid
  • 8 ounces canned tomato sauce
  • 1/2 cup dry white wine
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 small bay leaf
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon dried marjoram
  • 1 clove garlic
  • 1 pound spaghetti

Directions

    Heat the oil and cook the chicken in it until the chicken is golden brown.

    Add remaining ingredients except spaghetti.

    Cover and simmer for one hour, or until chicken is tender.

    Remove bay leaf.

    (The sodium level can be reduced by using no-salt-added canned tomatoes and tomato sauce, and by not adding salt.
