- 2 cans tomato wedges (Del Monte) or 1 qt. home canned tomatoes
- 3 to 4 chicken breasts (1/2 per serving)
- 1 green pepper, quartered
- 1 medium large onion, sliced thick
- 6 medium potatoes, quartered
- 6 carrots, sliced
- 3 stalks celery, cut into chunks
- 1 large clove garlic
- oregano, Italian seasoning, salt, pepper and parsley to taste
- 2 Tbsp. Romano cheese
Directions

1Saut onions and garlic in oil; add tomatoes and seasonings. Simmer for 1/2 hour.

2Brown chicken; place in a roaster which has been sprayed with vegetable spray.

3Pour tomato mixture over chicken and bake 1/2 hour at 350°.

4Add vegetables; cook 1 hour or until done.

5Can serve alone or over noodles.
