Chicken Cacciatore

  • 2 cans tomato wedges (Del Monte) or 1 qt. home canned tomatoes
  • 3 to 4 chicken breasts (1/2 per serving)
  • 1 green pepper, quartered
  • 1 medium large onion, sliced thick
  • 6 medium potatoes, quartered
  • 6 carrots, sliced
  • 3 stalks celery, cut into chunks
  • 1 large clove garlic
  • oregano, Italian seasoning, salt, pepper and parsley to taste
  • 2 Tbsp. Romano cheese

Directions

    Saut onions and garlic in oil; add tomatoes and seasonings. Simmer for 1/2 hour.

    Brown chicken; place in a roaster which has been sprayed with vegetable spray.

    Pour tomato mixture over chicken and bake 1/2 hour at 350°.

    Add vegetables; cook 1 hour or until done.

    Can serve alone or over noodles.
