- 2 garlic cloves
- 1/2 c. olive oil
- 1 frying chicken
- 3 1/2 c. tomatoes, sieved
- 1 1/4 tsp. salt
- 1 tsp. oregano
- 1/2 tsp. pepper
- 1 tsp. chopped parsley
Directions

1Heat in skillet until garlic is lightly browned 1/2 cup olive oil and 2 garlic cloves, sliced thin.

2Meanwhile coat with flour 1 frying chicken.

3Place skin side down in skillet with oil and brown.

4While chicken is browning, combine 3 1/2 cups tomatoes (sieved), 1 1/4 teaspoon salt, 1 teaspoon oregano and 1/2 teaspoon pepper.

5Slowly add tomato mixture to browned chicken with 1 teaspoon chopped parsley.

6Cook slowly 25 to 30 minutes or until thickest pieces of chicken are tender when pierced with fork.
