  • 1 or 2 small broiler-fryers, cut up
  • 2 medium size onions, sliced
  • 1 small clove garlic
  • 1 large can tomatoes
  • 1/2 lb. fresh mushrooms, sliced
  • 1 juice glass Rhine wine
  • 1 rounded Tbsp. dried basil
  • salt and pepper to taste
  • sugar to taste

    Melt butter with olive oil and brown chicken until golden brown.

    As pieces brown, place in pot which has been on stove with very low heat and cover.

    Remove excess chicken fat from pan, add onions and mushrooms.

    Add tomatoes and spices.

    Add wine.

    Pour this mixture into pot with chicken and simmer for 40 minutes or until chicken is cooked.
