  • 3/4 c. olive oil
  • 1/4 c. lemon juice
  • 1/4 c. finely grated Parmesan cheese
  • 1 can anchovies, drained and chopped
  • 1 clove garlic, minced
  • 2 tsp. Dijon mustard
  • 1/2 tsp. black pepper
  • salt
  • 4 boneless, skinless chicken halves
  • 1/2 lb. green beans, drained and cooled
  • 6 to 8 small potatoes, cooked and cooled, cut into quarters
  • 3/4 c. cooked or thawed frozen corn
  • 1 medium carrot, cut in halves
  • 2 green peppers, sliced
  • finely chopped parsley
  • basil

Directions

    To make Caesar Dressing, place first 7 ingredients in food processor, processing until smooth and creamy.
