- 1 1/2 lb. ground beef
- 1/2 to 1 onion, chopped
- 2 cans cream of mushroom soup
- 1 large can evaporated milk
- 1 can mild enchilada sauce
- 1 lb. Velveeta, cubed
- 1 pkg. corn tortillas (12 to 15), cut into pieces
Directions

1Saute beef and onion together in skillet.

2In a large saucepan, stir together the next 4 ingredients.

3Heat on medium to medium- high, or until cheese is melted.

4In a 9 x 13-inch pan, layer tortillas, ground beef and sauce.

5Repeat layers twice.

6Cover and heat in oven at 325° for 50 to 55 minutes.

7Remove cover; heat for 10 minutes.

8Serves 8 to 10.
