- 3 Tbsp. melted chicken fat
- 1 large onion, thinly cut
- 1 large green pepper, cut lengthwise
- 4 large chicken breasts
- 1/2 plus c. chicken broth (I use 1 can Campbell's chicken broth)
Directions

1Use a skillet or wok.

2Saute onion, green pepper, salt and pepper in chicken fat.

3Place potatoes on top of ingredients in skillet or wok, then chicken breasts on top of potatoes.

4Pour in broth.

5Cover and simmer gently, about 30 minutes.

6Do not stir.
