- 2 to 3 lb. chicken
- 1/2 c. flour
- 2 tsp. salt
- dash of pepper
- 1 c. heavy cream
- 3 c. cornbread crumbs
- 2/3 c. chopped celery
- 1/4 c. chopped onion
- 1/4 c. melted butter
Directions

1Cook chicken until tender.

2Cool and cut into bite-size pieces. Take fat off the cooled broth, blend fat with flour, 1 teaspoon salt and pepper.

3Slowly add 2 cups broth and heavy cream, stirring constantly.

4Cook over low heat until thick.

5Combine cornbread crumbs, celery, 1 teaspoon salt, pepper to taste and butter. Arrange cut up chicken and dressing alternately in large casserole. Cover with sauce and bake 50 to 60 minutes at 350°.
