  • 2 to 3 lb. chicken
  • 1/2 c. flour
  • 2 tsp. salt
  • dash of pepper
  • 1 c. heavy cream
  • 3 c. cornbread crumbs
  • 2/3 c. chopped celery
  • 1/4 c. chopped onion
  • 1/4 c. melted butter

    Cook chicken until tender.

    Cool and cut into bite-size pieces. Take fat off the cooled broth, blend fat with flour, 1 teaspoon salt and pepper.

    Slowly add 2 cups broth and heavy cream, stirring constantly.

    Cook over low heat until thick.

    Combine cornbread crumbs, celery, 1 teaspoon salt, pepper to taste and butter. Arrange cut up chicken and dressing alternately in large casserole. Cover with sauce and bake 50 to 60 minutes at 350°.
