Ingredients

  • 2 c. cooked chicken, cut in bite-size pieces
  • 1/2 lb. cashews
  • 5 1/2 oz. can chow mein noodles
  • 1/2 c. plus 2 Tbsp. chicken broth
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1/2 c. finely chopped onion
  • 2 1/2 c. finely chopped celery
  • 4 Tbsp. pimentos

Directions

    Lightly brown onion and celery in margarine; set aside.

    Mix soups and broth. Layer ingredients, starting with layer of noodles, then chicken, onion, celery, soup and nuts, ending with pimentos on top.

    Heat in 350° oven until bubbly, about 1/2 hour. Makes a long casserole dish full.
