  • 3 c. cooked diced chicken
  • 4 hard-boiled eggs, chopped
  • 2 c. rice, cooked
  • 1 1/2 c. celery, chopped
  • 1 small onion, chopped
  • 1 c. mayonnaise
  • 2 c. chicken soup
  • 1 (3 oz.) pkg. slivered almonds
  • 1 tsp. salt
  • 2 Tbsp. lemon juice
  • 1 c. bread crumbs
  • 1 Tbsp. oleo
  • 1/2 c. chicken broth

Directions

    Mix all ingredients except bread crumbs and oleo. Place mixture in buttered 9 x 12 pan. Brown crumbs lightly in oleo and sprinkle over casserole. Refrigerate overnight. Remove about one hour before cooking. Bake 40 to 45 minutes in 350° oven. Serves 8.
