- 3 or 4 chicken breasts
- 2 c. water
- 3 green onions
- celery tops
- 2 cans cream of chicken soup
- 1 c. uncooked elbow macaroni
- 1 c. Cheddar cheese, shredded
- 1/2 c. cashews (optional)
- 3/4 c. crushed Cheddar cheese crackers
Directions

1Simmer chicken in water with onions and celery tops until tender, about 25 minutes.

2Strain broth and save.

3Remove skin from chicken and break meat into chunks.

4Cook macaroni.

5Put into greased 2-quart casserole.

6Sprinkle cheese over macaroni.

7Cover with chicken and sprinkle with cashews.

8Pour soup thinned with 2/3 cup broth over the chicken.

9Top with crushed crackers and bake uncovered at 350° for 30 minutes or until bubbly.
