Ingredients

  • 3 or 4 chicken breasts
  • 2 c. water
  • 3 green onions
  • celery tops
  • 2 cans cream of chicken soup
  • 1 c. uncooked elbow macaroni
  • 1 c. Cheddar cheese, shredded
  • 1/2 c. cashews (optional)
  • 3/4 c. crushed Cheddar cheese crackers

Directions

    Simmer chicken in water with onions and celery tops until tender, about 25 minutes.

    Strain broth and save.

    Remove skin from chicken and break meat into chunks.

    Cook macaroni.

    Put into greased 2-quart casserole.

    Sprinkle cheese over macaroni.

    Cover with chicken and sprinkle with cashews.

    Pour soup thinned with 2/3 cup broth over the chicken.

    Top with crushed crackers and bake uncovered at 350° for 30 minutes or until bubbly.
