Chicken Cheddar Rice Bake

- 1/4 c. butter
- 1/4 c. flour
- 3 chicken bouillon cubes, crumbled
- 2 c. milk
- 3 c. cubed, cooked chicken (1/2-inch)
- 1/2 lb. fresh mushrooms, sliced
- 4 c. cold cooked rice
- 1 c. shredded sharp Cheddar cheese
Directions

1Melt butter in 3-quart saucepan.

2Blend in flour and chicken bouillon cubes.

3Gradually stir in milk.

4Cook over medium heat, stirring constantly until mixture comes to a boil.

5Remove from heat.

6Stir in chicken and mushrooms.

7Arrange rice in greased 8-inch square baking dish.

8Spoon chicken mixture over rice. Sprinkle with cheese.

9Bake in 350° oven 30 minutes or until bubbly.
