- 2 Tbsp. oil
- 2 medium chopped onions
- garlic powder
- 1 pkg. chicken breasts, boned and skinned
- 2 Tbsp. chili powder
- 2 tsp. ground cumin
- 2 cans stewed tomatoes
- 3 cans kidney beans
- 1 can corn
- salt, pepper and parsley
- grated Monterey Jack cheese
Directions

1Heat oil and add onions and garlic powder.

2Cook 2 to 3 minutes until tender.

3Add bite-size pieces of chicken, chili powder and cumin.

4Cook 3 to 4 minutes until chicken loses raw color and is well coated with seasonings.

5Add tomatoes, beans and corn.

6Bring to a boil and simmer covered 15 minutes.

7Uncover and cook 5 to 10 minutes until chicken is cooked through and sauce is thickened.

8Remove from heat and season with salt.

9Sprinkle with parsley and grated cheese to serve.
