Ingredients

  • 1 broiler-fryer chicken, cut in serving pieces
  • 3 c. water
  • 3 chicken bouillon cubes
  • 3 sprigs parsley
  • 2 ribs celery with leaves
  • 2 medium onions, sliced
  • 1 bay leaf
  • 1 tsp. salt
  • 1/2 tsp. dried leaf thyme
  • 4 carrots, pared and sliced
  • 1/3 c. uncooked regular rice
  • 1 (1 lb.) can cream-style corn
  • 2 c. milk
  • 1/4 to 1/2 tsp. hot pepper sauce

Directions

    In a large saucepan, place chicken, water and bouillon cubes, parsley, onions, bay leaf, salt and thyme.

    Bring to a boil. Cover, reduce heat and simmer 1 hour, until chicken is tender. Strain broth and return to saucepan.

    Remove chicken from bones. Cut into cubes and set aside.
