- 1 1/2 c. tomato juice or vegetable juice cocktail
- 3 Tbsp. chopped onion
- 3 Tbsp. chopped green pepper
- 2 Tbsp. diced celery
- 1/3 c. diced potato
- 1/4 tsp. dried basil
- half a chicken breast, cooked and diced
- freshly ground pepper
Directions

1Combine first five ingredients in a small saucepan.

2Bring to a boil; reduce heat and simmer until vegetables are tender, about 10 to 15 minutes.

3Add basil and diced chicken.

4Heat thoroughly. Taste and add seasoning as desired.
