  • 1 1/2 c. tomato juice or vegetable juice cocktail
  • 3 Tbsp. chopped onion
  • 3 Tbsp. chopped green pepper
  • 2 Tbsp. diced celery
  • 1/3 c. diced potato
  • 1/4 tsp. dried basil
  • half a chicken breast, cooked and diced
  • freshly ground pepper

Directions

    Combine first five ingredients in a small saucepan.

    Bring to a boil; reduce heat and simmer until vegetables are tender, about 10 to 15 minutes.

    Add basil and diced chicken.

    Heat thoroughly. Taste and add seasoning as desired.
