  • 6 chicken breasts, boned and skinned
  • 6 thin slices fat-free ham
  • 6 slices low-fat Swiss cheese
  • 1/4 c. flour
  • 2 Tbsp. diet margarine
  • 1 tsp. chicken flavored gravy base
  • 1 (4 oz.) can sliced mushrooms, drained
  • 2 Tbsp. flour
  • toasted sliced almonds

    Roll chicken pieces, boned side up, on cutting board.

    Working from center out, pound chicken with wooden mallet to make cutlets 1/4-inch thick.

    Sprinkle with salt.

    Place ham slice and cheese on each cutlet.

    Tuck in sides of each.

    Roll up like jelly roll. Skewer or tie securely.
