  • 1 (1 1/4 lb.) bone-in chicken breast
  • 2 c. water
  • 1 rib celery, cut up
  • 1 bay leaf
  • 1/2 tsp. salt
  • 2 c skim milk
  • 2 Tbsp. margarine
  • 1/2 diced onion
  • 1 c. diced celery
  • 2 Tbsp. flour
  • 2 c. potatoes (1/2-inch cubes)
  • 1 (17 oz.) can creamed corn
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Directions

    Combine chicken, water, celery, bay leaf and salt in a 3-quart saucepan.

    Bring to a boil. Simmer, covered, until chicken is tender.

    Remove chicken from broth, cool and dice.

    Set aside. Strain broth.

    Add milk.
