Ingredients

  • 1 c. chopped onion
  • 1 c. chopped celery
  • 1/4 to 1/2 c. chopped green peppers
  • 1/4 c. margarine
  • 1 chicken or 4 chicken breasts, cooked and diced
  • 2 c. chicken broth
  • 1 can cream of chicken soup
  • 1 can Ro-Tel tomatoes (with green chilies)
  • 1 can tomato sauce

Directions

    Saute onion, celery and peppers in margarine.

    Gradually add remaining ingredients.

    Simmer on stove for 1 to 2 hours.

    Add salt and pepper to taste.

    If too thin, add a cornstarch mixture to thicken.

    If too thick, add more broth.

    Serve over rice.
