Chicken Croquettes

Ingredients

  • 1 pt. cooked, deboned and finely chopped chicken
  • 1/4 c. finely chopped onion
  • 1 egg
  • 1/4 stick margarine
  • 1/4 c. flour
  • 1 c. milk
  • 1/2 c. fine bread crumbs
  • 1 Tbsp. finely chopped parsley
  • 1 tsp. poultry seasoning
  • 1 tsp. salt or to your taste
  • 1/8 tsp. pepper (to your taste)

Directions

    In a medium to large saucepan, melt 1/4 stick butter or margarine and stir in 1/4 cup flour until smooth.

    Add 1 cup milk and stir at a low boil until thickened and leaves sides of pan (about 2 minutes).

    Remove pan from burner.

    Add to this white sauce the chicken, onion, 1 egg, 1/2 cup fine bread crumbs, parsley, poultry seasoning, salt and pepper.

    Blend well. Refrigerate at least 1 hour.
