- 2/3 c. sweetened flaked coconut
- 1/4 c. fresh mint leaves, cut into strips
- 2 1/2 Tbsp. fresh lime juice
- 1 1/2 Tbsp. grated fresh ginger
- fresh mint sprig (garnish)
Directions

1Peel and section oranges over a bowl, reserving juice. Combine orange sections, juice and remaining ingredients; toss gently. Cover and chill until ready to serve. Garnish, if desired.
