Ingredients
- 3 Tbsp. butter
- 1/4 c. minced onion
- 1 1/2 tsp. curry powder
- 3 Tbsp. flour
- 3/4 tsp. salt
- 3/4 tsp. sugar
- 1/8 tsp. ground ginger
- 1/2 tsp. lemon juice
- 1 c. chicken broth or 1 c. chicken bouillon cube, dissolved in 1 c. hot water
- 1 c. milk
- 2 c. diced, cooked and boned chicken
- 3 to 4 c. cooked rice
Directions

1Melt butter over low heat in heavy saucepan.

2Saute onion and curry in melted butter.

3Blend in flour and seasonings.

4Cook over low heat until mixture is smooth and bubbly.

5Remove from heat.

6Stir in chicken broth and milk.

7Bring to a boil, stirring constantly.

8Boil 1 minute.

9Add chicken and lemon juice.

10Pour over rice and serve.
