  • 2 c. cooked, diced chicken, skinned
  • 1/2 lb. thin sliced mushrooms (fresh)
  • 1 Tbsp. oil
  • 1/3 c. chopped onion
  • 3 Tbsp. flour
  • 1 c. chicken broth
  • 1 1/2 tsp. curry powder
  • 1 c. finely chopped apple (don't peel)
  • 1/4 c. chopped parsley
  • 3/4 c. skim milk
  • 1 c. water

Directions

    Saute chicken, mushrooms and onions in oil until chicken is lightly browned.

    Stir in flour, broth and curry.

    Add apple and parsley, then pour in milk and water.

    Simmer, stirring constantly, for 3 minutes or until apple pieces are tender-crisp. Serve over rice.
