Chicken Curry

Ingredients

  • 1 onion, finely chopped
  • 1 c. butter
  • 1 Tbsp. curry powder
  • 1/4 green pepper
  • 1 garlic clove, crushed
  • 6 Tbsp. flour
  • 2 1/2 c. chicken broth (1 can)
  • 1 1/2 c. evaporated milk (1 can)
  • 1 cut up chicken, skinned or 6 thighs and 3 breasts, cooked

Directions

    Saute onion in butter.

    Add curry powder and stir in flour. Cook 2 to 3 minutes, then add chopped garlic and green pepper. (Mixture will be very thick.)

    Add chicken broth and evaporated milk.

    Simmer slowly until thickened (about 15 to 20 minutes). Season with salt and pepper to taste.

    Add chicken.

    Serve over rice.

    Suggested condiments:

    chopped eggs, bacon bits and peanuts.

    Sauce without the chicken added freezes well.
