Ingredients
- 1 onion, finely chopped
- 1 c. butter
- 1 Tbsp. curry powder
- 1/4 green pepper
- 1 garlic clove, crushed
- 6 Tbsp. flour
- 2 1/2 c. chicken broth (1 can)
- 1 1/2 c. evaporated milk (1 can)
- 1 cut up chicken, skinned or 6 thighs and 3 breasts, cooked
Directions

1Saute onion in butter.

2Add curry powder and stir in flour. Cook 2 to 3 minutes, then add chopped garlic and green pepper. (Mixture will be very thick.)

3Add chicken broth and evaporated milk.

4Simmer slowly until thickened (about 15 to 20 minutes). Season with salt and pepper to taste.

5Add chicken.

6Serve over rice.

7Suggested condiments:

8chopped eggs, bacon bits and peanuts.

9Sauce without the chicken added freezes well.
