- 4 Tbsp. butter or oleo
- 1/2 c. diced onion
- 3 tsp. curry powder
- 1/2 to 1/4 tsp. cayenne pepper
- 3 Tbsp. flour
- 3/4 tsp. salt
- 3/4 tsp. sugar
- 1/8 tsp. ground ginger
- 1 c. chicken broth
- 1 c. milk
- 1 1/2 c. chicken, cooked and torn in small pieces
- 1/2 tsp. lemon juice
- 1 c. uncooked rice (use directions on box)
Directions

1Melt butter over low heat in heavy saucepan.

2Saute onion and curry powder in melted butter.

3Blend in flour and seasonings. Cook over low heat until mixture is smooth and bubbly.

4Remove from heat; stir in

5chicken broth and milk.

6Bring to a boil, stirring

8Boil one minute.

9Add chicken and lemon juice.

11Serve sauce over cooked rice.
