Chicken Curry

Ingredients

  • 1 medium onion
  • 1/4 tsp. minced garlic
  • 2 tsp. curry powder
  • 1 Tbsp. olive oil
  • 2 half boneless skinned chicken breasts
  • 1 (14 1/2 oz.) can stewed tomatoes
  • 1 can whole new potatoes
  • 1 can cut green beans
  • 1/3 c. seedless raisins

Directions

    Cook onion, garlic and curry in oil in skillet.

    Stir in chicken, sliced 1/4-inch wide, tomatoes and raisins.

    Bring to boil.

    Cover and simmer 8 minutes.

    Add potatoes, drained and cut in chunks, and drained green beans.

    Cook, uncovered, 5 minutes, stirring occasionally.

    Season with salt and pepper if desired. Serves 4.
