  • 1 1/2 lbs Kalamata olives, rinsed
  • 12 oz green olives, rinsed
  • 3/4 cup olive oil
  • 2 None wide strips orange peel
  • 2 tbsp freshly squeezed orange juice
  • 1 None fresh long red chili pepper, thinly sliced
  • 2 cloves garlic, thinly sliced
  • 2 None bay leaves
  • 1 tsp fennel seeds, toasted
  • 1 sprig fresh rosemary, halved
  • 2 sprigs fresh lemon thyme
