Chicken Cutlets With Tomato

Ingredients
- 6 chicken cutlets, sliced thin (about 1 1/2 lb.)
- 2 Tbsp. olive oil
- 2 cloves garlic, minced
- 1 c. sliced mushrooms
- 2 c. crushed tomatoes
- 1/2 c. wine (dry)
- 1/2 tsp. oregano
- 1 tsp. dry basil
Directions

1Coat cutlets with nonstick cooking spray and place in heated frying pan.

2Saute on both sides for 2 minutes.

3Remove and keep warm.

4Add oil to pan and saute garlic and mushrooms for 5 minutes.

5Add crushed tomatoes and wine.

6Cook for 10 minutes more.

7Place cutlets in pan and simmer for 5 to 10 minutes.

8Makes 3 to 4 servings.

9Serve with white rice.
