Ingredients
- 1 (6-7 lb.) fat hen or large chicken
- 2 cans (14.5-oz.) chicken broth
- 1 stick butter or margarine, divided
- 1 can (10 3/4-oz.) cream of chicken soup
- 3/4 c. finely chopped celery
- 1 c. finely chopped onions
- 1 Tbsp. poultry seasoning
- 3 Tbsp. rubbed sage or to taste (can use ground sage)
- 1 Tbsp. salt (or to taste)
- 2 tsp. black pepper (or to taste)
- 3-4 slices loaf bread, finely crumbled
Directions

1Cook hen in large stock pot with about 3 quarts water and 1/2 stick margarine.

2Add more water as needed.

3When chicken is getting tender and liquid has reduced to about half, add the two cans of broth.

4Bring back to a boil and cook about 15 minutes longer.

5Remove cooked chicken (reserving broth).

6Stir in cream of chicken soup until well blended.

7Debone chicken and set aside. Place 2 tablespoons margarine in skillet, add onions and celery, saute.

8While chicken cooks make cornbread.
