  • 1 whole chicken
  • 2 large cans enchilada sauce
  • 1 pkg. large flour tortillas
  • 2 bunches green onions
  • 1 large can Ortega whole peppers
  • 2 large sour cream
  • 2 c. cheese, grated
  • 2 c. sliced olives

Directions

    Boil chicken, skin and bone.

    Dip tortillas in sauce.

    Put chicken, Ortega peppers, sour cream, chopped green onions and cheese together.

    Last, roll into a burrito in rectangle pan, continue.

    Pour remaining sauce over enchiladas and top with strip of any leftover ingredients and cheese.

    Bake 25 to 30 minutes in 350° oven or until cheese melts.
