Chicken Enchiladas

  • 1 hen or large fryer, boil, bone and cut into cubes
  • 1 lb. grated sharp Cheddar cheese
  • 18 tortillas
  • 1 onion
  • 1 can Ro-Tel tomatoes
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can chicken broth from cooked chicken

Directions

    Grease large casserole or 2 small ones.

    Put chicken, cheese and onion in each tortilla and fold over.

    Place in casserole. Blend Ro-Tel tomatoes, cream of mushroom soup, cream of chicken soup and chicken broth.

    Pour over casserole and bake 45 minutes at 400°.

    Serves 6 to 8.
