  • 1 whole chicken
  • 1 onion, diced
  • 4 regular cans enchilada sauce
  • 4 c. cheese
  • 1 bag corn tortillas (30 count)
  • chicken broth

    Boil whole chicken until it's falling apart. Remove skin and bone from chicken. In a large bowl, mix shredded chicken, 2 cans of enchilada sauce, diced onion and 2 cups of cheese. Pour a small amount of chicken broth in the bottom of 2 casserole dishes. Roll chicken mixture in tortillas. Pour the remaining 2 cans of enchilada sauce over the rolled enchiladas and spread the remaining cheese over the top. Bake, uncovered, at 350° for
