Chicken Enchiladas

Ingredients

  • 3 cooked chicken breasts or 1 chicken, cooked, boned and cut in small pieces
  • 1 medium onion, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 c. chicken broth
  • 1 pkg. corn tortillas, cut in small pieces
  • 1 lb. Longhorn cheese, grated
  • several drops Tabasco sauce
  • 2 Tbsp. butter
  • 1 small can chopped green chilies

Directions

    Brown onion in melted butter.

    Combine soups, broth, green chilies, Tabasco sauce and chicken.

    Mix well.

    In large oblong pan, place a layer of cut up tortillas.

    Spoon on chicken mixture. Sprinkle with a layer of cheese.

    Repeat layer.

    Bake at 350° for 30 minutes or so.
