- 1 pkg. corn tortillas
- light (canola) cooking oil
- 1 can enchilada sauce
- 4 to 5 boiled and shredded chicken breasts
- 2 c. shredded Cheddar cheese
- 2 c. shredded Mozzarella cheese
- chili powder to taste
Directions

1Mix cooked chicken with the cheeses and onion.

2Add the chili powder and set aside.

3Cover bottom of a hot frying pan with cooking oil.

4Allow oil to heat up and fry each tortilla.

5Pour enchilada sauce in a pie plate.

6Dip the softened tortilla in the sauce and put about 2 tablespoons of the chicken mixture in tortilla.

7Wrap up and place seam side down in baking dish.

8Top with remaining sauce and cheeses.

9Bake at 375° until cheese is melted and bubbly.
