Chicken Enchiladas

  • 1 lb. chicken breast
  • 1/2 jar picante sauce, divided
  • 1 1/2 c. Cheddar cheese, shredded
  • 1 (8 oz.) pkg. cream cheese
  • 8 flour tortillas

Directions

    Cut chicken into thin strips and cook.

    Mix 1/2 of picante sauce, cream cheese and chicken in saucepan over low heat until smooth.

    Spoon 2 tablespoons chicken mixture onto each tortilla; roll up.

    Place seam side down, in lightly greased 12 x 8-inch baking dish.

    Sprinkle cheese over tortillas; cover with foil. Bake at 350° for 20 minutes.

    Pour remaining picante sauce over tortillas.

    If desired, top with sour cream and olives.
