- 4 chicken breasts, skinned and boned
- 1/2 c. Parmesan cheese
- 1 c. fine cracker crumbs
- 2 eggs, well beaten
- 1 c. oil
- 1 lb. fresh mushrooms
- 1/2 lb. Jack cheese
- 1/2 c. white wine
Directions

1Dip chicken breasts in Parmesan cheese, egg and cracker crumbs. Brown in 1/2 cup oil in skillet.

2Arrange in baking dish in single layer.

3Arrange 1 slice of 1/4-inch jack cheese on each breast. Adding oil to skillet if necessary, saute sliced fresh mushrooms until tender.

4Add wine and saute slowly for 5 minutes.

5Spoon mushrooms over chicken (not too much liquid).

6Cover and bake at 350° for 45 minutes.
