- 1 cut up fryer
- 1 can Ro-Tel tomatoes with chilies
- 2 onions, chopped
- 1 bell pepper, chopped
- 1 can tomato sauce
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. parsley (optional)
- 1 pkg. Old Smokehouse creole gumbo mix
Directions

1Cut up fryer and cover with water.

2Add one can of Ro-Tel tomatoes with chilies, 2 onions (chopped), one chopped bell pepper.

3Bring to a boil.

4Simmer one hour.

5Remove chicken.

6Add one can tomato sauce, 1 teaspoon salt, pepper and parsley (optional).

7Add one package of Old Smokehouse creole gumbo mix. Bring back to a boil.

8Let boil 25 to 30 minutes slowly.

9Remove chicken from bones.

10Cut in bite size pieces and add to gumbo.
