- 2 Tbsp. parsley
- salt and pepper to tate
- 3 split chicken breasts or 6 thighs, cooked and cut
- 1 1/2 qt. broth
- 1/2 c. tomato paste
- 3 cloves garlic, crushed
- 1/4 c. celery
- 2 Tbsp. flour (for roux)
- 2 plus c. okra, cut
- 1 lb. tomatoes
- 1 bay leaf
Directions

1Saute onion in oil and add garlic.

2Stir in flour to make a roux.

3Stir constantly as it browns.

4Add other ingredients and simmer for approximately 1 hour.
