  • 1 c. onion, chopped
  • 3 Tbsp. peanut oil
  • 2 Tbsp. parsley
  • salt and pepper to tate
  • 3 split chicken breasts or 6 thighs, cooked and cut
  • 1 1/2 qt. broth
  • 1/2 c. tomato paste
  • 3 cloves garlic, crushed
  • 1/4 c. celery
  • 2 Tbsp. flour (for roux)
  • 2 plus c. okra, cut
  • 1 lb. tomatoes
  • 1 bay leaf

    Saute onion in oil and add garlic.

    Stir in flour to make a roux.

    Stir constantly as it browns.

    Add other ingredients and simmer for approximately 1 hour.
