- chicken breast, cooked and chopped into small pieces
- 1 large onion, diced
- 1 green pepper, diced
- 1 stalk celery, diced
- 2 large tomatoes, diced
- 3 c. chicken broth
- 2 1/2 c. uncooked rice
- 1 pkg. smoked sausage, chopped into small pieces
- 3 Tbsp. cooking oil
Directions

1In a large skillet, cook sausage, onion, pepper and celery until halfway done.

2Do not drain.

3In another skillet, add 3 tablespoons of oil and cook rice slowly until browned.

4Add other cooked ingredients in a large pot and add tomatoes and chicken broth; cook for 30 minutes.

5Add to mixture to thicken.

6Season to taste with ground red pepper, garlic powder, seasoned salt and pepper.
