Chicken Gumbo

  • 1 (2 1/2 lb.) fryer chicken, cut up
  • 2 qt. canned tomatoes
  • 4 c. frozen okra
  • 6 slices bacon
  • 3 cloves garlic, minced
  • 2 onions, diced
  • 2 tsp. paprika
  • 2 Tbsp. black pepper
  • 2 tsp. cayenne pepper
  • 2 tsp. oregano
  • 1 tsp. sage
  • 2 bay leaves
  • 6 dashes hot sauce
  • 4 to 6 c. cooked white rice

    Boil chicken until done, about 45 minutes.

    Cool and remove chicken from fat and bones.

    Cut chicken into 1-inch pieces; set aside.

    Fry bacon, then remove from skillet.

    Drain and crumble. Fry onions in bacon drippings until soft and drain.

    Combine all ingredients, except okra.

    Simmer for 2 to 3 hours or use crock-pot on low heat for 4 to 6 hours.

    One hour before serving, add okra.

    Serve over bed of rice.

    (Leftovers can be frozen.) Makes 6 large servings.
