Chicken Gumbo

  • 1 qt. cooked, diced hen
  • 3/4 c. chicken fat
  • 2 lb. okra, cut
  • 2 c. chopped onion
  • 1 c. chopped green pepper
  • 3 qt. chicken stock
  • 1 c. chopped celery
  • 2 (16 oz.) cans tomatoes, chopped
  • salt and pepper to taste
  • 2 tsp. Tabasco

Directions

    Saute okra, onion, green pepper and celery in chicken fat until tender but not browned.

    Add tomatoes and seasonings.

    Cook slowly about 25 minutes, stirring frequently.

    Add chicken stock. Simmer for half an hour.

    Add cooked chicken and simmer another half-hour.

    Serve over steamed rice.
