Chicken Gumbo

- 1 qt. cooked, diced hen
- 3/4 c. chicken fat
- 2 lb. okra, cut
- 2 c. chopped onion
- 1 c. chopped green pepper
- 3 qt. chicken stock
- 1 c. chopped celery
- 2 (16 oz.) cans tomatoes, chopped
- salt and pepper to taste
- 2 tsp. Tabasco
Directions

1Saute okra, onion, green pepper and celery in chicken fat until tender but not browned.

2Add tomatoes and seasonings.

3Cook slowly about 25 minutes, stirring frequently.

4Add chicken stock. Simmer for half an hour.

5Add cooked chicken and simmer another half-hour.

6Serve over steamed rice.
