  • 2 Tbsp. butter or margarine
  • 1 onion, finely chopped
  • 3 Tbsp. flour
  • 1 c. chicken broth
  • 1/2 c. milk
  • 1 tsp. Dijon mustard
  • 1 tsp. oregano
  • salt and pepper to taste
  • juice of 1/2 lemon
  • 3 c. cooked chicken, cut in small pieces
  • 8 slices hot toast or 4 English muffins, halved and toasted

    Heat butter in saucepan and saute onion about 3 minutes until softened.

    Add broth and milk gradually, stirring with wire whisk to form smooth sauce.
