- 1 1/2 lb. leeks, thickly sliced
- 12 oz. potatoes, thinly sliced
- 1 Tbsp. oil
- 1 garlic clove or to taste
- 7 oz. reduced fat soft cheese with garlic and herbs
- 4 oz. white wine
- 8 oz. chicken stock
- 8 skinless chicken thighs
- salt and pepper to taste
Directions

1Saute leeks and garlic to soften.

2Place cheese, wine, stock and 2 teaspoons corn flour in blender until smooth.

3Put chicken on top of leeks, pour on cheese mixture.

4Layer potatoes on top of mixture.

5Cover with oiled piece of foil.

6Bake at 350° for 1 1/4 hours or until potatoes are done.
