Chicken In Wine

Ingredients

  • pieces of cut-up chicken
  • flour
  • salt
  • oregano
  • margarine
  • 2 red onions, sliced
  • 1 c. fresh mushrooms, sliced
  • 1 green pepper, chopped
  • 1 can frozen orange juice concentrate
  • 1 juice can red wine

Directions

    Dust the chicken in mixture of flour, salt and oregano.

    Brown lightly.

    One at a time, saute the vegetables.

    Place chicken pieces in a casserole dish and place the sauteed vegetables on top.

    Add the orange juice and wine.

    Cover and bake at 350° at least 2 hours, basting occasionally.

    Serve with rice prepared as follows:

    To cooked rice, add 1 stick margarine, 1/2 cup salted, chopped peanuts, cinnamon and ginger.
