- a handful ground cornmeal
- slight handful flour
- generous pinch soda
- pinch of salt
- buttermilk (to make a medium-thick batter)
Directions

1Sift together cornmeal, flour, soda and salt; add buttermilk. Generously grease skillet with butter or margarine and place in hot oven until skillet is hot.

2Sprinkle bottom of skillet with cornmeal and pour in batter.

3Cook at 375° to 400° oven until brown.

4Remove from oven and turn out on plate to cool or serve hot.

5This is good eaten in a glass of milk.
