  • 3 lb. chicken, cut in eighths
  • 1/4 c. flour
  • 1/4 c. olive oil
  • 1 c. diced onions
  • 1/2 lb. mushrooms
  • 1 1/2 c. white cooking wine
  • 1 lb. can tomatoes, drained and cut
  • 1 tsp. lemon juice
  • 1/8 tsp. each: pepper, basil and oregano

    Coat chicken with flour.

    Brown in olive oil.

    Saute onion until golden.
