- 1 Tbsp. butter
- 1 (3 lb.) frying chicken, cut in serving pieces
- 1 onion, coarsely chopped
- 1 green pepper, coarsely chopped
- 2 Tbsp. lemon juice
- 2 c. chicken stock
- 1 1/3 c. mincemeat
- 1 tsp. salt
- dash of pepper
- 1 c. uncooked rice, long grain
- 1 Tbsp. curry powder
Directions

1In a large skillet, melt butter.

2Brown chicken.

3Remove chicken from skillet.

4Saute onion and green pepper.

5Add lemon juice, chicken stock, mincemeat, salt, pepper, rice and curry powder.

6Mix. Put in buttered dish.

7Arrange chicken over it. Cover and bake in oven for 1 hour at 350°.
