- 2 Tbsp. oil
- 4 chicken breasts
- seasoned flour
- 1/2 lb. fresh mushrooms, sliced
- 1 jar marinated artichoke hearts, drained
- 1 clove garlic, minced
- 1 1/4 tsp. salt
- 1/2 tsp. oregano
- 1/2 tsp. pepper
- 2 c. canned or fresh tomatoes, diced
- 1/2 c. sherry
Directions

1Preheat oven to 350°.

2Heat oil in frying pan.

3Dredge chicken breasts in seasoned flour and brown in oil.

4Place chicken in casserole with mushrooms and artichoke hearts.

5Stir garlic and spices with tomatoes and pour over chicken.

6Bake 1 to 1 1/2 hours or until tender, adding sherry during the last few minutes of cooking time.

7Yield: 4 servings.
