- 1 tbsp chopped fresh parsley
- 1/2 tsp paprika
- 1/2 tsp crushed red pepper flakes
- 1/4 tsp salt
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 lb chicken breast, cut into 1-inch pieces
- 3 bell peppers, cut into 1-inch pieces
- 1/4 cup chopped onion
- 2 clove finely chopped garlic
- 1/2 tsp ground cumin
Directions

1Mix onion, garlic, parsley, paprika, pepper flakes, cumin, salt, lemon juice, and 2 tablespoons of the olive oil

2Add chicken, turning to coat with marinade.

3Refrigerate, turning chicken occasionally, at least 1 hour

4Heat grill.

5Thread chicken and bell peppers on skewers

6Place kabobs on grill over medium heat

7Cook 9 to 11 minutes, turning occasionally, brushing with remaining 2 tablespoons oil, until chicken is no longer pink in center
